White Wine Herb Salmon

Well after hitting up the fish market at the commissary today came home with some very nice farm raised salmon. Between me and my hubby being busy this week, cooking has been simple chicken and veggies. I needed a change of poultry today. Most of the time I marinate my meats/fish/poultry because 1 Flavor and 2 I can just come home and cook. I'm a big fan of Weber marinade mixes and always trying to duplicate the recipe. As mom and wife when the tot and hubby are hungry, their hungry. So here's my White Wine Marinade, goo for fish or poultry. . .not so much red meat but hey you can do what you want with it. 



White Wine Herb Marinated Salmon

Ingredients:
White Wine Marinade(recipe below)
2lbs Salmon( can be used for chicken as well)

Directions:
Add marinade to plastic baggie, add fish and marinate for 30 minutes up to 6 hours. You never have to marinate fish over night but you can. Fish never takes as long as poultry or red meat to soak up flavor.





Heat pan, grill, oven(I'm using a double sided nonstick cook top with grill grates on one side and  flat on the other. It can be used for gas, induction or electric stove tops) and cook until thoroughly cooked thru. For you newbies that 145 or cook until flesh is opaque and separates easily with a fork.

White Wine Marinade
Makes about 1 cup
1/4 cup water
1/4 cup olive oil
1/4 cup Sherry Wine(can sub for any White wine if you like)
1 1/2 tsp Koshers Salt
1/2 tsp White Ground Pepper
1 tsp onion powder
1 tsp garlic powder
3 Tbsp Italian Herbs(fresh or dried){parsley, oregano, thyme, Basil}
1 tsp Dried Red Bell Pepper
1 Tbsp Vinegar

Directions: 

For marinade add all in ingredients together in blender and blend till smooth



***More Tips***
  • You can substitute water for Lemon juice, Orange Juice or Pineapple Juice to give marinade a different kick
  • Add Diced green onions or red bell peppers to marinade after you blend for more intense flavor
  • If your in the mood to make it sweeter, try a any sweet white wine like riesling or moscato instead of sherry.
  • If you want a real kick, add 1 fresh jalapeno in with marinade
