Cauliflower Mash

I love mashed potatoes, but if I want my hubby to eat them I have to make the healthy kind. To achieve this, the next best thing is cauliflower mash. Here's a simple way to achieve the same yummy texture and the kids love it too





Cauliflower Mash
Makes 4 servings

Ingredients:


  • 1 big head or 2 small ones
  • 2 Tbsp Olive Oil
  • 1 Tbsp Parsley(dried or fresh)
  • Kosher salt to taste(about 1 tsp)
  • White Grd Pepper to taste(about 1/2 tsp)


Directions:

Start by boiling water-add salt(what I'd did), steam or roast, your choice :). 



Quick tip If you dot want your cutting board to move, use cabinet liner. Keeps it from it siding while you cut




Take Cauliflower head and cute in half. Trim off stem.






If you have bad spots, simply cut them off and throw bad parts away




Sometimes you can pull them off. Chop in large chunks





I boiled about 7-10 minutes, till tender. The same goes for if your steaming or roasting. 






Strain if boiled, I used my handy fryer scoop. Put cauliflower in food processor, along with olive oil and parsley. Blend till smooth, add salt and pepper to taste while blending.







Serve with your favorite steak or chicken dish and enjoy. You can also refrigerate and heat later if you like.




*****Tips*****
*When putting cauliflower in food processor add a handful of spinach, for spinach version.
*Roasted red bell pepper, for a pepper version.
*One small roasted jalapeƱo, for spicy kick.
*For cheesy version add 1/4 cup your choice of Parmesan, cheddar, or mt jack.
*For super creamy add 1/4 of cream cheese
